Method
- 01Preheat oven to 350°F. Spray 12-cavity muffin pan with cooking spray.
- 02Whisk eggs and cane sugar in a large bowl. Add coconut oil, coconut milk, mashed bananas, and vanilla. Whisk to combine.
- 03In a separate bowl, mix oats, baking powder, and salt. Add to wet ingredients with 1 tbsp chocolate chips. Mix to combine.
- 04Divide mixture evenly among 12 muffin cups using an ice cream scoop or 1/4 cup measure.
- 05Sprinkle remaining chocolate chips on top of each cup.
- 06Bake 20 to 25 minutes until lightly golden and puffed.23 min
