Ingredients
- olive oil
- 2 tbsp
- yellow oniondiced
- 1 cup
- green bell pepperdiced
- 1 cup
- sweet potatoesdiced into 1/2-inch cubes
- 1 3/4 lb
- paprika
- 1 tsp
- garlic powder
- 1 tsp
- kosher salt
- 1/4 tsp
- black pepper
- 1/4 tsp
- water
- 1/4 cup
Method
- 01Heat a large skillet over medium heat. Add olive oil.
- 02Saute onion and bell pepper until tender, about 5 to 7 minutes.
- 03Remove onion and pepper to a plate. Add sweet potatoes in an even layer.
- 04Cook 5 minutes without stirring. Stir and cook another 5 minutes until browned on both sides.
- 05Pour water into skillet, cover with lid, and steam until potatoes are fork tender, 5 to 10 minutes.8 min
- 06Return onion and pepper to skillet. Season with paprika, garlic powder, salt, and pepper. Stir and cook 30 seconds.
