  1. 01Heat a large skillet over medium heat. Add olive oil.
  2. 02Saute onion and bell pepper until tender, about 5 to 7 minutes.
  3. 03Remove onion and pepper to a plate. Add sweet potatoes in an even layer.
  4. 04Cook 5 minutes without stirring. Stir and cook another 5 minutes until browned on both sides.
