Method
- 01Drain and rinse chickpeas. Reserve 1/2 cup; set aside.
- 02Combine remaining chickpeas, oil, salt, cayenne, cumin, garlic powder, chana masala, and 1 tbsp water in a skillet over medium heat. Cover and cook 4 to 5 minutes.5 min
- 03Add lemon juice, cover, and let sit a few minutes. Transfer to serving bowl.
- 04In same or different skillet, combine green beans, 1/4 tsp salt, 1/4 tsp garam masala, 1 tbsp ketchup, and 2 tbsp water. Mix, cover, and cook over medium heat 6 to 8 minutes until tender.8 min
- 05Blend reserved 1/2 cup chickpeas with non-dairy milk, 1/3 tsp salt, 3/4 to 1 tsp chana masala, 1/4 tsp cayenne, 1/2 tsp garlic powder, kala namak, 2 tbsp tomato ketchup, and 1/4 tsp sugar until smooth. Adjust consistency, salt, spice, and sweetness to taste.
- 06Layer bowl with spiced chickpeas, green beans, greens, roasted or raw vegetables, brown rice, and generous drizzle of chickpea dressing. Serve warm or cold. Sprinkle with salt, pepper, and lemon juice if needed.
