Ingredients
- cherry tomatoes
- 3 cups
- fresh basilthinly sliced into ribbons
- 1/2 ounce
- kosher salt
- to taste
- black pepper
- to taste
- French baguette
- 1 loaf
- extra virgin olive oil
- 2 1/2 tbsp
- garlicminced
- 2 1/2 cloves
- balsamic glaze
- to taste
Method
- 01Heat 2 1/2 tbsp olive oil in a large pan over medium heat until shimmering.
- 02Add cherry tomatoes and cook undisturbed for 2 minutes until they begin to pop.
- 03Add minced garlic, season with salt and pepper, toss, and cook 2 minutes more, stirring occasionally, until tomatoes blister.
- 04Slice baguette diagonally into 1/2-inch slices and brush one side with olive oil.
- 05Heat a cast-iron pan or griddle over high heat. Arrange bread olive oil side down and toast until golden with darker edges, about 2 minutes.
- 06Brush top of bread with olive oil, flip, and toast the other side until golden, about 2 minutes.
- 07Transfer bread to a platter. Spoon blistered tomatoes onto each slice, top with basil ribbons and a drizzle of balsamic glaze.
- 08Serve immediately.
