  1. 01Squeeze grated cucumber in a flour sack towel over a colander to remove excess moisture.
  2. 02Stir together cucumber, yogurt, olive oil, lemon zest, lemon juice, garlic, dill, salt, and pepper in a mixing bowl.
  3. 03Adjust consistency with olive oil or lemon juice if too thick. Taste and add more salt and pepper as needed.
  4. 04Serve chilled, garnished with fresh dill and a drizzle of olive oil.
