Ingredients
- potatoescut into 1/2 inch cubes
- 2 cup
- zucchini
- 2 cup
- salmon filets
- 1 lb
- olive oil
- 1 tbsp
- sriracha
- 1 tbsp
- honey
- 1 tbsp
- garlic powder
- 1 1/4 tsp
- black pepper
- 1/4 tsp
- salt
- 1/4 tsp
Method
- 01Preheat oven to 450°F.
- 02Line a baking sheet with parchment. Toss potatoes with olive oil, spread on sheet, bake 20 min.20 min
- 03Whisk sriracha, honey, 1/4 cup olive oil, and 1 tsp garlic powder. Coat salmon with mixture.
- 04Push potatoes to one side of sheet. Add zucchini and salmon. Spray zucchini with oil, season zucchini and potatoes with salt, pepper, and remaining garlic powder.
- 05Bake 12-15 min until salmon is browned and flakes easily. Broil 1-2 min for crispier edges if desired.15 min
