Ingredients

Method
- 01Heat olive oil in an oven-safe skillet over medium heat. Cook onion with 1/2 tsp salt until softened, 5-7 minutes.7 min
- 02Add potatoes and 1/2 tsp salt. Cook 10-15 minutes, stirring every 5 minutes to crisp all sides. Cover for the last 3-4 minutes to soften.
- 03Whisk eggs with parsley, 1/2 tsp salt, and pepper in a bowl.
- 04Pour egg mixture evenly over potatoes and onions. Cook on stovetop 3-4 minutes.
