  1. 01Heat olive oil over medium heat in a medium braiser or pot.
  2. 02Add onion and salt, cook until golden, about 20 minutes. Reduce heat if onions begin to brown. Stop when oil pools slightly around the onions.
  3. 03Stir in vinegar, scraping up browned bits from the bottom.
  4. 04Add chickpeas, broth, and emmer. Bring to a simmer and cook a few minutes to meld flavors and warm through.
  5. 05Add more broth or water if needed for desired brothiness.
  6. 06Remove from heat, stir in parmesan and black pepper to taste, and serve.
