Method
- 01Preheat oven to 375°F. Spray a 12-cup muffin pan with cooking spray.
- 02Heat a medium saute pan over medium-high heat. Add onion, celery, bell pepper, garlic, salt, and pepper. Cook 5-6 minutes until vegetables lose their raw edge.
- 03Stir in Worcestershire sauce and chicken broth. Cook 5 minutes until vegetables are tender and mixture is heated through. Turn off heat and cool.
- 04In a large bowl, combine ground turkey, egg whites, oats, cumin, chipotle spice, garlic powder, black pepper, and salt.
- 05Add cooled vegetables to turkey mixture and mix until well incorporated.
- 06Roll mixture into 12 even balls and place each in a greased muffin cavity.
