Ingredients
- seitancut into bite-sized pieces

Method
- 01Whisk vegetable broth, soy sauce, sesame oil, rice vinegar, maple syrup, and cornstarch for the sauce. Set aside.
- 02Heat 1 tbsp avocado oil in a large skillet over medium heat. Add seitan and cook until golden brown, 4-5 minutes. Transfer to a plate.
- 03Add 1 tbsp avocado oil to the skillet. Add onion, bell pepper, mushrooms, and a pinch of salt. Sauté until soft, about 5 minutes. Add water if needed to prevent sticking.5 min
- 04Add carrots and garlic. Sauté 2 minutes.
- 05Return seitan to the skillet. Pour sauce over everything and stir until thickened and coated, about 1-2 minutes. Season with salt and pepper.
- 06Serve over rice. Garnish with green onion.
