Ingredients
- chicken breastsboneless skinless, pounded thin

- instant brown rice
- 2 cup
- water
- 2 cup
- broccoli florets
- 2 cup
- chili powder
- 4 tsp
- Italian seasoning
- 4 tsp
- black pepper
- 4 tsp
- salt

Method
- 01Preheat oven to 400°F.
- 02Line a baking sheet with 4 sheets of foil, about 6 to 8 inches each.
- 03Combine rice and water in a bowl and soak 5 minutes.5 min
- 04Divide rice and soaking water evenly among the 4 foil sheets.
- 05Pound chicken breasts with a meat tenderizer or rolling pin until even thickness.
- 06Place one chicken breast and 1/2 cup broccoli florets on each foil sheet over the rice.
- 07Season each chicken breast with 1 tsp chili powder, 1 tsp Italian seasoning, 1 tsp black pepper, and salt to taste.
