Method
- 01Bring a medium pot of water to a boil.10 min
- 02Add chili flakes and garlic to a large heat-proof soup bowl.
- 03Heat oil in a small pot until it just starts to smoke lightly, then pour over chili flakes and garlic. Stir until combined.
- 04Add light soy sauce, dark soy sauce, black vinegar, sugar, and sesame seeds to the bowl.
- 05Add dried shrimp and dried laver to the bowl.
- 06Drop dumplings into boiling water while gently stirring to prevent sticking.
- 07Bring water back to a boil and cook dumplings 6 to 8 minutes depending on size. Add 1/4 cup cold water each time water reaches a vigorous boil, or cook 30 seconds to 1 minute after dumplings float to the top.8 min
- 08Add 1 cup dumpling cooking water to the soup base in the bowl.
- 09Transfer dumplings to the bowl using a strainer or slotted spoon.
- 10Add scallion and cilantro, season with salt to taste.
