Ingredients

Method
- 01Heat chicken broth in microwave or small pan until just starting to boil.
- 02In a pan with tight-fitting lid, heat olive oil and butter over medium heat until butter melts.
- 03Add rice and cook 2-3 minutes, stirring occasionally, until lightly browned.
- 04Add salt and lemon juice, cook 1 minute.
- 05Add hot broth and bring to a very low boil.
- 06Lower heat to lowest setting that maintains a bare simmer, cover, and cook 22 minutes without lifting lid.22 min
- 07Remove lid and check that liquid is mostly absorbed and rice is tender. Cook a few minutes longer covered if needed.
- 08Fluff rice with fork and stir in pesto.
