  1. 01Heat olive oil in a skillet over medium heat. Add garlic and sauté for 1 minute until fragrant.
  2. 02Add cauliflower rice and sauté for 5 minutes until softened.5 min
  3. 03Add diced tomatoes with green chiles and all juices, chili powder, smoked paprika, cumin, oregano, salt, and pepper. Stir and cook for 5 minutes until most liquid evaporates.
  4. 04Taste and adjust salt or spices. Top with green onions and serve.
