Method
- 01Preheat grill to medium-high.
- 02Combine ground turkey, shallot, ginger, garlic, lemongrass, cilantro, lime zest, scallion, jalapeño, salt, sugar, white pepper, and 2 tsp olive oil in a bowl. Break apart turkey with a fork, then knead with a wet hand until mixed.
- 03With damp hands, shape into 4 burgers, compressing edges. Refrigerate on a plate until ready to grill.
- 04Toss carrot, purple cabbage, scallion, lime juice, 1 tbsp olive oil, salt, and pepper in a bowl.
- 05Whisk mayonnaise and sriracha in a small bowl.
- 06Grill burgers on a well-greased grill 4 to 5 minutes per side until golden and cooked through to 160°F.10 min
- 07Toast buns on the grill.
- 08Spread aioli on bottom bun, top with burger patty, slaw, cucumber ribbons, more aioli, and top bun.
